They discuss Phil's brewing background including his time at Stone and The Bruery as well as his training in the US and Germany and the decision to leave his previous brewery to co-found Eureka during the middle of the COVID pandemic.

We get the low down on the wide range of beer styles that Phil enjoys including deep dives into the distinctions between different types of hazes, why sour beers are like cats and the inspiration behind their amazing can art.
